Ingredients

  • 2 cooked hash brown patties about 4-5 ounces
  • 1/3 cup cooked crumbled sausage (about 2 ounces)
  • 1/4 cup shredded cheddar cheese
  • 1 egg
  • Spray oil or butter

Instructions

  • Heat a small pan to medium heat, then spray with oil. Once oil is hot, crack an egg into the pan to fry. Cook to preference (I like the yolk runny, personally), then set aside.
  • Tear or cut your hash browns into several pieces and place them in a shallow bowl. Top the hash browns with warm, crumbled sausage and top with cheese. Slide the cooked egg onto the cheese, allowing the warmth to melt it. Sprinkle with green onions, fresh herbs, and additional cheese for garnish if you prefer
