Equipment

Ingredients
  

  • ¼ cup greek yogurt I used low carb Fage yogurt
  • ¼ cup olive oil
  • 2 tbsp minced garlic
  • 2 tbsp lemon juice
  • 1 tbsp rice vinegar
  • 1 tbsp dill
  • 1 tsp salt
  • 1 tsp pepper
  • 1 pound chicken breast cut into cubes
  • 1 medium zucchini cut into cubes
  • ¼ cup red onion cut into cubes

Instructions
 

  • In a medium size mixing bowl combine all of the marinade ingredients and whisk until combined. Remove 2 tablespoons of the marinade for the vegetables.
  • Add the cubed chicken to the marinade and chill for at least one hour.
  • Preheat a grill to high heat (400 degrees)

  • Toss the zucchini and red onion in the reserved 2 tablespoons of marinade.

  • If using wooden skewers soak in water for 10 minutes. If using metal skewers lightly spray with cooking oil so the ingredients do not stick.
  • Thread the chicken, zucchini, and red onion on the skewers.

  • Grill 4-5 minutes on each side.

    Enjoy with extra lemon, dill and feta if desired!
