These Greek Chicken Kabobs are loaded with flavorful chicken, zucchini and red onion! At only 3.5 net carbs per serving this is a low carb keto friendly dinner you will love!
In a medium size mixing bowl combine all of the marinade ingredients and whisk until combined. Remove 2 tablespoons of the marinade for the vegetables.
Add the cubed chicken to the marinade and chill for at least one hour.
Preheat a grill to high heat (400 degrees)
Toss the zucchini and red onion in the reserved 2 tablespoons of marinade.
If using wooden skewers soak in water for 10 minutes. If using metal skewers lightly spray with cooking oil so the ingredients do not stick.
Thread the chicken, zucchini, and red onion on the skewers.
Grill 4-5 minutes on each side.
Enjoy with extra lemon, dill and feta if desired!
