Ingredients
  

  • 12 large eggs
  • 1/4 cup heavy cream
  • 4 slices thick cut bacon chopped
  • 2 cups broccoli
  • 1/4 cup scallions
  • 1 teaspoon garlic
  • salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Over medium heat brown the chopped bacon until crisp, remove from the skillet and set aside. Discard all up 1 tablespoon of the bacon grease.
  • Add the broccoli, scallions and garlic to the skillet and sauté over medium low heat for 3-4 minutes until the vegetables have softened slightly.
  • In a bowl whisk the eggs and heavy cream. Add salt and pepper to taste.
  • Add half the bacon and cheese over the broccoli, carefully pour the eggs in the skillet. Top with the remaining cheese and bacon.
  • Bake for 18-22 minutes until the eggs have set in the center.
