Ingredients
  

  • 1 medium size zucchini
  • 1 cup cooked taco meat
  • 1 cup shredded cheddar cheese

Instructions
 

  • Slice the zucchini into 1/4 inch slices and place on a lined air fryer basket.
  • Top the zucchini with the cooked taco meat and shredded cheese.
  • Heat the air fryer to 375 degrees F. Cook the zucchini for 6 minutes. Cook in additional 2 minute increments until the cheese is golden and the zucchini is tender.

Oven Instructions:

  • Preheat the oven to 375 degrees F. Follow the directions above to prepare the nachos. Bake for 10 minutes, check to see when the zucchini is fork tender. Bake additional 2 minute increments until the zucchini has reached your desired tenderness.
