Buffalo Chicken Mac and Cheese

This Buffalo Chicken Mac and Cheese is the ultimate one pan meal! Loaded with noodles, chicken, buffalo sauce and cheese this is a crowd pleasing meal everyone will love!

Ingredients
  

  • 1 pound chicken breast cut into small chunks
  • 1 tablespoon dry ranch seasoning*
  • 1 tablespoon butter
  • cup chicken broth
  • cup milk
  • cup elbow noodles gluten-free noodles work as well
  • 2 tablespoons butter
  • ¼ cup mild buffalo sauce
  • 2 cups shredded cheddar cheese divided

Instructions
 

  • Toss the cubed chicken with 1 tablespoon of dry ranch seasoning.
  • In a large skillet heat 1 tablespoon of butter over medium heat, cook the chicken until browned and all of the moisture has evaporated, approximately 5-6 minutes. 
  • Add the broth and milk, stir well. Increase heat to medium high until the mixture begins to simmer.
  • Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes.
  • When noodles are tender stir in additional butter, buffalo sauce and half of the cheese. Stir well. Top with additional cheese and cover to allow the cheese time to melt, or broil if you prefer a crispy texture. 

Notes

*If you do not have dry ranch seasoning on hand you can sub your favorite all purpose seasoning.
