Ingredients
  

  • 1 10 ounce bag frozen cauliflower rice
  • 1/2 cup peas and carrots
  • 2 teaspoons sesame oil
  • 1 tablespoon minced garlic
  • 2-3 tablespoons soy sauce I used gluten free
  • 2 eggs beaten
  • 1/4 cup green onions chopped

Instructions
 

  • Heat a large skillet over medium heat, spray with cooking spray. Add the fozen cauliflower rice, and frozen peas and carrots to the skillet. Sauté stirring occasionally until all of the steam has released.
  • When steam is no longer emitting from the skillet add the sesame oil, garlic and soy sauce. Stir the rice well so the soy sauce and oil are evenly distributed.
  • Push the rice to one side of the skillet and add the beaten egg (spray the pan with cooking oil if you need to) and scramble the egg. Stir in the egg and green onion.
  • Garnish with an additional drizzle of sesame oil and soy sauce if desired.
