Ingredients
  

  • 3 large eggs
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
  • 1-2 teaspoons Italian seasoning

Instructions
 

  • Preheat the waffle maker. In a medium-sized mixing bowl, beat eggs. Add in all remaining ingredients and stir until well incorporated.
  • Once the waffle maker is hot, spray with oil and spoon in about 3 tablespoons of batter. Make sure not to overfill--It makes a huge mess! Close the lid and allow to cook until there's no steam coming out (about 4-5 minutes usually).
  • Remove chaffle once golden brown and set aside. Continue with remaining batter, then serve with additional parmesan, marinara dip, and fresh herbs.

Notes

One teaspoon of Italian seasoning is enough for a light flavor, but you may want to increase this if you plan to use it for garlic bread, pizza, or other recipes where a bolder Italian flavor is needed.
