Ingredients
  

  • 1 1/2 pounds chicken breast cut into small chunks or strips
  • 1 bell pepper seeded and sliced
  • 1 onion sliced
  • 2 jalapeños seeded and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon minced garlic
  • 1 teaspoon lime zest packed
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions
 

  • Preheat the oven to 400 degrees F. Line a large baking sheet with foil and lightly spray with cooking oil
  • Place the chopped onion, bell pepper, jalapeño and chicken in rows on the pan.
  • In a small bowl combine the olive oil, lime juice, lime zest and garlic. Drizzle over the entire sheet pan.
  • In another small bowl combine the chili powder, cumin, garlic powder, paprika, salt and pepper.
  • Sprinkle over the chicken and vegetables and toss to coat so the seasoning is evenly distributed.
  • Bake 15 minutes, remove from oven and turn, bake 10-15 minutes more until the chicken is cooked through.

This recipe makes 4 servings. Each serving is about 1.5 cups and has 4.4 net carbs.
