- 3 large tomatoes mix of heirloom and regular
- 2 cups cherry tomatoes quartered
- 4 ounces burrata
- 1/3 cup shredded basil
Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 tablespoons champagne vinegar*
- 2 tablespoons sweetener honey or sugar free maple syrup if low carb
- 1 teaspoon Dijon mustard
- 1 teaspon minced garlic
- salt and pepper to taste
Combine the vinaigrette ingredients in a bowl and whisk until smooth.
Slice the large tomatoes horizontally, discarding the ends.
Arrange the large tomato slices and quartered tomatoes on a rimmed platter or bowl. Drizzle with half of the vinaigrette.
Place the burrata in the center and drizzle the remaining dressing over the burrata and tomatoes.
Top with chopped basil and salt and pepper to taste.
Serve immediately.
- Moisture will be an issue if this salad sits out, it is best to serve fresh.
- You can use apple cider vinegar if you cannot find champagne vinegar.
