Cajun Chicken Pasta Recipe

Equipment

Ingredients
  

  • 1 tablespoon olive oil
  • 1 cup red onion finely chopped
  • 1 red bell pepper seeded and finely chopped
  • 1 green bell pepper seeded and finely chopped
  • 1/2 cup celery finely chopped
  • 4 cloves garlic crushed and minced
  • 1 10-ounce can Rotel drained
  • 2 teaspoons cajun seasoning
  • 1 teaspoon each paprika, Italian seasoning, and garlic powder
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • 3 cups dry penne pasta

After Pasta is Cooked

  • 1 cup shredded parmesan
  • 1 cup cooked chicken
  • 1/2 cup heavy whipping cream
  • salt and pepper to taste

Instructions
 

  • In a large deep pan or dutch oven heat the olive oil over medium heat.
  • Add the chopped onion, bell peppers and celery. Sauté until softened.
  • Add the garlic and sauté an additional 30 seconds.
  • Add the drained can of tomatoes with green chiles, chicken broth, heavy whipping cream, and spices. Bring the mixture to a simmer. Add the penne pasta, cover, reduce heat to medium low and simmer 6-8 minutes until the pasta is al dente.
  • Stir in the parmesan, cooked chicken and heavy whipping cream over low heat. Serve when the chicken is heated through.
