  • 1 pound ground beef
  • 1 cup yellow onion thinly diced
  • 3/4 cup carrot thinly diced
  • 1 small yellow bell pepper seeded and thinly diced
  • 4 medium russet potatoes cut into small cubes
  • 32 ounces beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons hamburger seasoning or your favorite all-purpose seasoning blend
  • 1 teaspoon each: garlic powder and onion powder
  • 1/2 teaspoon paprika
  • 8 ounces cream cheese softened
  • 1 1/2 cups shredded cheddar cheese
  • Optional: crispy bacon, additional cheese, fresh herbs for garnish

Instructions
 

  • In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Drain any excess grease.
  • Add the diced onion, carrot, and bell pepper to the pot with the beef. Cook for 3-4 minutes until softened.
  • Stir in the Worcestershire sauce, hamburger seasoning, garlic powder, onion powder, and paprika, mixing well.
  • Add the diced potatoes and beef broth.
  • Bring to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes or until the potatoes are tender.
  • Stir in the cream cheese and cheddar cheese until smooth.
  • Taste and adjust seasonings as needed. Serve hot, garnished with shredded cheese, crispy bacon, or fresh herbs if desired. Enjoy!

Size of serving depends on the size of your vegetables and the amount your liquid reduces during the simmer. One serving is 1/6th of recipe.
