Ingredients
  

  • 10 large eggs
  • 1/4 cup heavy cream
  • 1/2 pound breakfast sausage
  • 1/2 cup chopped and seeded jalapenos
  • 1/2 cup chopped red bell pepper
  • salt and pepper to taste
  • 1 1/2 cups shredded cheddar cheese

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Over medium heat, brown the sausage, breaking up as you go. When the sausage is nearly cooked through add the chopped peppers and saute 3-4 minutes until tender.
  • Remove the skillet from heat and set aside.
  • In a bowl whisk the eggs and heavy cream. Add salt and pepper to taste. Fold in one cup of the shredded cheddar cheese.
  • Carefully pour the egg mixture into the skillet.
  • Bake for 15 minutes and remove from the oven and add the remaining 1/2 cup shredded cheese. Bake an additional 6-10 minutes until the eggs have set.

Notes

  • I used a heat proof 9-inch cast iron skillet for this recipe. You can also use a 9 inch pie pan if you prefer. Be sure to prepare whatever dish you use by greasing it so the frittata does not stick.
