  • Combine all of the ingredients in a food processor or in a large mixing bowl.
  • If using a food processor, pulse the mixture lightly until the mixture is just combined. If using a bowl, stir the mixture until it is combined and resembles traditional cookie dough.
  • Scoop the cookie dough out using a tablespoon.
  • Store in an air tight container in the refrigerator.

Notes

I find the texture is better when made in a food processor, as it helps to break up the coconut flakes and chocolate chips.
This recipe made 18 tablespoon-sized cookie dough balls, and each one has 1.2 net carbs as written.
