Ingredients
  

  • 1 tablespoon butter
  • pounds chicken cubed
  • ½ cup italian dressing
  • 2 cups asparagus chopped woody ends removed
  • cup broth vegetable or chicken
  • cup heavy cream
  • ½ cup parmesan
  • 3 cloves garlic
  • salt and pepper to taste

Instructions
 

  • Marinate the cubed chicken in the Italian dressing for at least one our before cooking or up to 24 hours.
  • Preheat oven to 350 degrees.
  • Heat a large oven proof skillet to medium heat and add butter. Pull chicken out of marinade (discard marinade) and place pieces in the hot skillet. Brown the chicken for 4-5 minutes on each side. Try not to stir it around much so that it develops a good color and crust.
  • When the chicken is browned and the moisture has cooked off, add the chopped asparagus, garlic, broth, heavy cream, parmesan, and salt and pepper to taste. Stir well.
  • Cover the skillet and bake for 20 minutes at 350 degrees.
  • Garnish with fresh tomatoes, basil and additional parmesan if desired.
