What is a Frittata?
A frittata is a savory egg bake that can include all different sorts of ingredients, such as meats or vegetables. An important detail to note is that frittatas are started on the stove top, and end in the oven. An omelet, for example, only cooks on the stove top and is cooked at a higher heat. People often get frittatas and quiches confused- a quiche has a crust, while a frittata is crustless.

How to make a Frittata
This bacon frittata starts on the stovetop and is finished in the oven, so an oven safe skillet is necessary. I recommend using a cast iron skillet or a stainless steel skillet (just be sure that the entire skillet is stainless steel, including the handle).
- Brown the chopped bacon until crisp, remove from the skillet and set aside. Discard all up 1 tablespoon of the bacon grease.
- Add the broccoli, scallions and garlic to the skillet and sauté over medium low heat for 3-4 minutes until the vegetables have softened slightly.
- In a bowl whisk the eggs and heavy cream. Add salt and pepper to taste.
- Add half the bacon and cheese over the broccoli, carefully pour the eggs in the skillet. Top with the remaining cheese and bacon.
- Bake for 18-22 minutes until the eggs have set in the center.

Easy Frittata Tips and Suggestions
- Be sure to use an oven safe skillet.
- For the best flavor, use a full fat dairy, such as heavy whipping cream.
- Finely chop your broccoli.
- Be sure to cook your bacon to a crispy consistency.
- Spread all of your ingredients as evenly as you can so every bite is full of flavor!
How to Store and Reheat a Frittata
To store your frittata, place in a glass or plastic container with an airtight lid and put in the fridge. This frittata will stay fresh for up three days. This frittata can also be frozen. Wrap individual pieces in plastic wrap and place in a freezer bag- it will stay fresh for up to two months.
To reheat from frozen, place in the fridge overnight to thaw. To reheat in the microwave, place on a microwave safe plate and warm in 30 second increments until it is to your desired temperature. You can also warm it in the oven- use any oven safe dish and warm at 350 for 7-10 minutes. I recommend covering with aluminum foil so your frittata doesn’t dry out. You can also warm in the Air Fryer– place your frittata into the Air Fryer and warm at 300 degrees for 5-6 minutes. I recommend covering the frittata with aluminum foil.
