Are you doing a little anxiety baking right now? Yeah, me too. This is a great recipe to loose yourself in because it has a couple different layers, while it is an easy recipe it does take a little bit of time. This is a great recipe to make while your home binging your favorite podcast!

What ingredients do you need to make Keto Chocolate Cheesecake?

  • Cream cheese
  • Eggs
  • Powdered Keto sweetener such as Swerve or Monkfruit
  • Cocoa powder
  • Vanilla extract
  • Heavy cream
  • Unsweetened bakers chocolate
  • Strawberries
  • Lilly’s dark chocolate chips
  • Whipped Cream

These Keto Chocolate Cheesecakes with Chocolate Covered Strawberries are the ultimate low carb treat! 

How do you make Keto Chocolate Cheesecake?

This recipe has basically four layers. The bottom layer is a shortbread cookie crust made with almond flour. The second layer is a chocolate cheesecake that is light and fluffy. The third is whipped cream and the fourth and final step is a chocolate covered strawberry. 

  1. Preheat the oven to 350 degrees. To make the chocolate crust: combine the melted butter, almond flour, keto friendly sweetener and cocoa powder.
  2. Press the dough into the bottom of a silicone muffin pan (or paper lined muffin pan)
  3. Pre-bake the crust for 7 minutes and allow the crust to cool COMPLTELY.
  4. In a stand mixer or hand mixer combine the cream cheese, eggs, sweetener, cocoa powder and vanilla until things are just barely incorporated.
  5. Add the melted bakers chocolate and the heavy cream. Mix until completely smooth, mixture will be light and airy.
  6. Spoon onto the cooled crust.
  7. Bake 15-18 minutes until the cheescake has set. Remove from oven and allow the cheesecakes to cool competely.

For the Chocolate Covered Strawberries: Slice the strawberries in half, they will sit cut side down on the cheesecake. Melt the Lilly’s Sugar Free Chocolate Chips and carefully dip the strawberry slices in the chocolate and allow to cool on a silicone baking sheet or wax paper.

To assemble the Cheesecakes: Top each cheesecake with whipped cream and a chocolate covered strawberry. Drizzle with any additional melted chocolate if desired.

Ingredients
  

Chocolate Crust

  • 8 tablespoons butter melted
  • 1¼ cup almond flour
  • 2 tablespoons cocoa powder

Dark Chocolate Cheesecake

  • 16 ounces cream cheese
  • 2 eggs
  • ½ cup keto friendly powdered sweetener Swerve or Monkfruit
  • 2 tablespoons cocoa powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • ¼ cup heavy cream
  • 4 pieces unsweetened bakers chocolate

Topping

  • 2 cups whipped cream (make your own for keto)
  • 12 strawberries
  • 1/2 cup Lily's Dark Chocolate Chips

Instructions
