We are huge buffalo chicken fans. One of our favorite easy dinners are these Air Fryer Buffalo Chicken Wings. They are easy, have no flour but are always ultra crispy. During the summer we have these Buffalo Chicken Zucchini Boats weekly when our zucchini is coming in.
It is just a delicious flavor that everyone loves. This Buffalo Chicken Mac and Cheese is no different. It is a complete one pan meal that is ready in less than 30 minutes from start to finish.
What ingredients do you need for Buffalo Chicken Mac and Cheese?
- Chicken
- Butter
- Seasoning: Dry Ranch seasoning or your favorite all purpose seasoning
- Milk
- Chicken Broth
- Elbow Noodles
- Cheese
- Buffalo Sauce
As written, this recipe requires dry Ranch seasoning. I love the flavor combination of Ranch, buffalo sauce and cheddar, however if you don’t have it on hand you can use another all purpose seasoning that you like.
How do you make Buffalo Chicken Mac and Cheese?
- Toss the cubed chicken with 1 tablespoon of dry ranch seasoning.
- In a large skillet heat 1 tablespoon of butter over medium heat, cook the chicken until browned and all of the moisture has evaporated, approximately 5-6 minutes.
- Add the broth and milk, stir well.
- Increase heat to medium high until the mixture begins to simmer.
- Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes.
- When noodles are tender stir in additional butter, buffalo sauce and half of the cheese. Stir well.
- Top with additional cheese and cover to allow the cheese time to melt, or broil if you prefer a crispy texture.
How spicy is this Buffalo Chicken Mac and Cheese?
This recipe makes a large pan that includes 6 hearty servings. For the entire recipe I only use 1/4 cup of mild buffalo sauce. In my opinion this creates a mild buffalo flavor. I believe this would be subtable for those who don’t enjoy spicy things. However, if you are weary of spice add 2 tablespoons and then do a taste test, add additional sauce if you’d like.
