Chicken Cordon Bleu Sandwich Ingredients
Here is a quick overview of what you will need for this recipe. For exact measurements, keep scrolling down to the printable recipe card near the bottom of the page.
- Chicken – I used chicken breasts because they are lean and easily available. Chicken thighs or tenders will also work if you prefer. Boneless, skinless cuts keep this simple and lower in fat.
- Ham – Cooked and diced. You can buy the packaged diced ham, cut your own from a ham steak, or even slice up some lunch meat if it is all you have. I prefer thick chunks, but you can change that for your own preferences.
- Swiss cheese – Shredded. If you want to save a tiny amount of carbs, shred it yourself from a block. Feel free to replace this with mozzarella, provolone, cheddar, or your favorite cheese.
- Cream cheese – Full fat melts a little better, but the difference is negligible. You can use low fat cream cheese if you prefer.
- Italian Dressing Mix – This is the small 0.6 ounce packets, not the actual dressing. This seasoning mix makes the recipe SO easy (no measuring spices!) and thickens the filling up so it is nice and creamy.
How to make chicken cordon bleu in a crock pot
In addition to the ingredients listed above you will need a slow cooker. This is such a simple recipe you will want to make again and again! Here is a step-by-step guide for making these creamy chicken sandwiches.
Cook Chicken

Add chicken breasts, cream cheese, mustard, and Italian dressing mix to a slow cooker. It is perfectly fine to leave the cream cheese in the brick form to save time, but make sure it is softened. Cold cream cheese is very difficult to get smooth if you heat it up without softening it first. Cook on high for about 3 hours or on low for 6-8 hours.
Shred Chicken and Mix
Once the chicken reaches 165 degrees F in the center, remove just the chicken and place it on a plate. Shred the chicken with two forks (or toss it in a Kitchenaid mixer with a paddle and let it do the work). Next, stir together the liquid in the slow cooker until the cream cheese is smooth. Add the shredded chicken back to the crock pot and stir to coat.
Add Ham and Cheese

Next, add the chopped ham, shredded Swiss cheese, and parsley to the slow cooker, and stir the mixture until it is fully incorporated. Wait 10 minutes to allow the ham to warm up. You can have the slow cooker on “warm” or even turned off completely at this point as the residual heat will likely be enough to do the job.
Serve
This cheesy chicken filling is excellent on croissants, buns, chaffles, or wraps! To make a tasty sandwich, slice the bread, add lettuce, Chicken Cordon Bleu filling and a pickle if you desire! These sandwiches are excellent with Ranch Zucchini Chips and a simple arugula salad for a light, healthy meal. The grandkids love them with Carrot Fries or a Creamy Cucumber Salad, too.

Storage & Reheating
- FRIDGE – Store in an airtight container in the fridge up to 3 days. It is best to store the filling on its own, not in a croissant, bun, or lettuce wrap as the bread/lettuce will get soggy.
- FREEZER – In a freezer bag, this crockpot chicken cordon bleu will last up to 6 months. For the best texture, allow to thaw overnight in the fridge before reheating.
- REHEATING – Reheat individual servings with 30-second blasts in the microwave, stirring between each session until warmed throughout. To reheat the entire batch, place in a baking dish, cover with foil, and reheat on 350 degrees F in the oven until warmed through. If it is too thick, stir in a splash or two of chicken broth.
