No matter where you are in life, things are probably pretty different than they were a month ago. Or even a few weeks ago for that matter. This is a stressful time and I want to help ease some of the anxiety, even if just in a small way. I’m going to share some of my favorite quick, easy, kid friendly recipes in the next few weeks.

First up is this super easy Bacon Cheeseburger Mac. It is made in one pan, under 30 minutes and has all of the flavor of a delicious Bacon Cheeseburger but in cheesy pasta form. It makes for a generous meal and the leftovers are even better!

This is very easy to customize based on your preferences. You can skip the bacon if you don’t have it or need to stretch your groceries a little longer. You can also sub ground turkey for ground beef it you want to go for a leaner option.

What ingredients do you need to make Bacon Cheeseburger Mac? 

For the most part, this recipe has pantry staples you probably already have on hand. The ingredients you need are:

  • Bacon
  • Ground Beef
  • Beef Broth
  • Milk
  • Tomato Sauce
  • Spices: onion powder, garlic powder, paprika, salt and pepper
  • Mustard
  • Elbow noodles (regular or gluten free)
  • Cheese

How do you make Cheeseburger mac?

  1. In a large skillet cook the chopped bacon until crispy. Remove from the skillet and set aside, drain off the grease.
  2. Brown the ground beef over medium heat, drain off any grease.
  3. Add the broth, milk, tomato sauce, mustard, and spices stir well.
  4. Increase heat to medium high until the mixture begins to simmer.
  5. Stir in noodles and reduce heat to low, cover and allow to cook for 15-20 minutes.
  6. When noodles are tender top with cooked bacon and shredded cheddar cheese.

The best part of this recipe is that it makes a large meal all made in just one pan. There is very little clean up of time needed. Some other easy one pan meals you might love are this Easy Taco Mac. Ingredients
  

  • 4 slices bacon chopped
  • 1 pound ground beef
  • 1 cup beef broth
  • 1 cup milk
  • 8 ounce tomato sauce
  • 1½ teaspoon mustard
  • 1½ teaspoon onion powder
  • 1½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1½ cup elbow noodles regular or gluten free
  • 1½ cup shredded cheddar cheese

Instructions

    I made this tonight with a few tweaks and my husband loved it!
    I cooked the macaroni first. While they were boiling, I fried the bacon. I added 1/2 chopped onion and 3 cloves of garlic minced to the bacon grease then added the ground beef. Since the pasta was cooked already, I decreased the broth to about a quarter cup and added some cream cheese along with the tomato sauce. Mixed it all together with some shredded cheddar. Added a layer of shredded cheddar to the top then baked at 425 for about 10 to 12 minutes.
    It was delicious!
