What is a BBQ Stack?
In our house we call these BBQ Stacks. They are Jalapeno Cheddar Cheese Waffles (“chaffles”) piled high with BBQ chicken, fresh slaw, and drizzled with BBQ sauce! They are always on the menu later in the week when I make our favorite Slow Cooker BBQ Chicken. Since I use the leftover chicken this meal comes together in less than 20 minutes. It is comfort food at it’s finest!

Ingredients for Keto BBQ
This recipe has a few different components, but it is so easy! To make this low carb bbq plate you will need:
- Jalapeño Cheddar Chaffles: this recipe requires shredded cheese, jalapeños, eggs, almond flour and baking powder.
- BBQ Chicken: Chicken breast, apple cider vinegar, garlic, BBQ sauce and a sweetener of your choice. Alternatively, you can use rotisserie chicken and your favorite BBQ sauce if you prefer a shortcut.
- Slaw: slaw mix or shredded cabbage, mayonnaise, salt and pepper
How do you make Keto BBQ Stacks?
Simply take a jalapeño cheddar waffle and stop with warm BBQ chicken, slaw and more bbq sauce!
This recipe is so easy to customize based on your preferences. If you have a favorite vinegar based slaw that you love just use that! If you want to skip the jalapeños in the waffles, that is fine too! Just add what you love and make these your own!
Keto BBQ Sauce
Is there such a thing as Keto BBQ Sauce? Yes! For this recipe I use my favorite sugar free BBQ sauce. It has great smokey, tangy flavor that works perfectly in this recipe! You can also use regular BBQ sauce if carbs aren’t a concern, or your favorite homemade recipe!
Can you use pulled pork?
Absolutely! This meal is amazing with pulled pork! This is my go to BBQ Pork recipe, it features a Boston butt covered in a savory rub and smoked until it is fall apart tender. The pulled pork works really well in this recipe and is a great way to change things up!
How is this recipe low carb?
Instead of traditional waffles this recipe features keto waffles, also known as chaffles that are cheese based. Each waffle has less than 2 net carbs!
Also, instead of a traditional BBQ sauce that is loaded with sugar we use a low carb sauce and a keto-friendly sweetener such as golden monkfruit.
Do I have to make this keto?
Nope! If you prefer a more traditional waffle base use this jalapeno cheddar cornbread waffle recipe and your preferred BBQ sauce!

Ingredients
Jalapeno Chaffles
- 3 large eggs
- 1 cup shredded cheese any variety or mixture
- 1/4 cup almond flour
- 1/2 teaspoon baking powder
- 1/4 cup chopped and seeded jalapeño fresh or canned
BBQ Shredded Chicken
- 3 cups BBQ Shredded Chicken recipe linked below OR 3 cups rotisserie chicken with G. Hughes BBQ sauce to taste
Slaw
- 1 1/2 cup slaw mix
- 2 tablespoons mayonnaise
- salt and pepper to taste
Instructions
Chaffle Directions:
- Combine the eggs, shredded cheese, almond flour and baking powder in a small bowl and mix well.
Preheat a waffle maker according to the directions and lightly spray with cooking oil if needed.
Spoon the batter into the waffle maker and cook 2-3 minutes until steam is no longer coming from the machine.
This recipe makes 6 chaffles using the Dash Mini Waffle Maker.
BBQ Stack Directions:
- To assemble the stack: 1 chaffle with 1/2 cup shredded chicken, 1/4 cup slaw mix.
- Drizzle with additional BBQ sauce and add salt and pepper if desired.
