Is raw cookie dough safe to eat?
Generally speaking, raw cookie dough is not safe to eat, as eggs and flour require pre-baking to kill any bacteria. Luckily, though, these keto cookie dough bites are perfectly safe to eat due to the omission of eggs and swapping out of regular flour for almond flour, made purely from ground almonds.
How to store raw cookie dough bites?
Raw cookie dough can be kept in the refrigerator in a sealed container for around 5 days. You may wish the separate your dough into bite-sized portions for convenience, wrapping them in wax paper to keep the them from sticking to your container.
You can also store cookie dough in the freezer if you’d like to keep it a little longer or make it up in batches. Simply wrap your mixture in wax or parchment paper and freeze. Try to use your frozen cookie dough within six months to ensure it doesn’t lose its lovely flavor.
Tips for Keto Cookie Dough Bites
Cookie dough can be mixed however you prefer – either with a stand mixer, food processor or a good old-fashioned bowl and spoon. Personally, I love the texture formed by the food processor, as it helps break up the coconut flakes really well. Having said that, it’s totally down to your preference, and half the fun is in the experimentation!
What’s more, this recipe is totally versatile to be adjusted to your tastes. Why not try switching up those flavors by adding maple extract, rum extract or sugar free white chocolate chips, for example?
