Some of the benefits of spinach include  potassium, magnesium, B6, vitamin C, folic acid and iron. This really is a breakfast of champions!

What ingredients do I need for Keto Egg Muffins?

These easy low carb egg muffins are highly customizable. You can swap the bacon for ham or sausage to switch up your protein. You can also use Pepper Jack instead of cheddar if you want to add a little spice. The possibilities are truly endless. For this recipe I used:

  • Eggs
  • Spinach
  • Heavy Cream
  • Shredded Cheddar Cheese
  • Bacon, cooked and chopped
  • Baking powder, salt and pepper

How do you make low carb egg bites?

The only prep work you have to do for this recipe is to cook the bacon. Alternatively, you could purchase precooked bacon bits at the store to make these even quicker.

Aside from the bacon this is really just a one bowl recipe. Combine the eggs, heavy cream, spinach, cheddar, bacon, baking powder, salt and pepper. Whisk the mixture until it is smooth and all the yolks have broken.

Scoop into muffin tins and bake 18-20 minutes at 350 degrees. I highly recommend using a silicone muffin pan because the egg muffins will always come out cleanly.

These convenient little egg muffins reheat super well. They are great for meal prepping to make grab and go breakfasts easier. Simply store in the refrigerator in an air tight container. You can also freeze these and pull them out individually. I reheat in the microwave in 20 second increments until warm.

Ingredients
  

  • 6 eggs
  • ¼ cup heavy cream
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp baking powder
  • 1 cup cheese
  • 1 cup bacon
  • 2 cups fresh spinach torn into pieces

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine the eggs, cream, baking powder, salt and pepper in a bowl and whisk until smooth.
  • Stir in the cheese, cooked bacon and spinach.
  • Spoon into silicone muffin tins. Bake 18-20 minutes.
