This Low Carb Peanut Butter Chocolate Fudge has about 2 net carbs per slice and is the perfect keto and diabetic-friendly dessert!
My favorite Low Carb Peanut Butter Chocolate Fudge only has a handful of ingredients and takes only a few minutes to prepare! I have always loved fudge. It is usually a treat that I associate with the holidays, but let’s be honest, you do not need a special occasion to enjoy a nice creamy slice of fudge!
One of the best things about this recipe is that aside from the low carb sugar substitute you do not need any hard to find ingredients. Ingredients Needed for Low Carb Peanut Butter Chocolate Fudge
- Butter
- Keto Friendly Sweetener: Brown Sugar Swerve or Brown Sugar Monkfruit
- Peanut Butter
- Cocoa Powder
- Optional: vanilla extract and sea salt
How do you make low carb fudge?
- Heat a medium size sauce pan over medium heat, melt butter and add brown sugar, stir continuously until sugar dissolves and it begins to simmer and a thick brown caramel begins to form. This usually takes 6-8 minutes for me. (see video below)
- When the sauce is thickened and looks like caramel remove from heat and stir in the peanut butter and vanilla extract (if using) until melted.
- Spoon out 1/2 cup of the peanut butter fudge mixture and set aside.
- Stir in the cocoa powder in the remaining fudge mixture.
- Line a loaf pan with wax paper and carefully pour the chocolate fudge into the pan, then top with the peanut butter fudge and swirl.
- Freeze 30 minutes or until completely set. Peel the wax paper away from the fudge and slice. I slice the loaf into three long skinny rows, then slice the long rows into 7 chunk size pieces.
- Top with sea salt as desired.
How do you store fudge?
This fudge can be stored in the refrigerator or the freezer. It does begin to soften and melt if you leave it out room temperature, so avoid that.
Is this fudge keto friendly?
Certainly! At about 2 net carbs per slice this is a great keto snack. This could also be called a keto fat bomb. A ketogenic diet is a low carb, high fat diet. When on keto your primary energy source is fat, so people often add fat bombs to their diet to meet their quota or add a little boost. Fat bombs can be sweet or savory they must be low in carbs and high in fat.
