These easy Corn Fritters are loaded with sweet corn, salty bacon, green chilies and spices!

Sometimes you just need a good appetizer style dinner. These easy Corn Fritters fit the bill perfectly! They are a staple in our house around football season because they are such a great filling appetizer. However, I find that during summer when sweet corn is plentiful and I don’t want to heat up the house by turning on the oven I crave these crispy corn fritters.

What ingredients do you need to make Corn Fritters?

  • Bacon, cooked and chopped
  • Sweet Corn
  • Creen Chiles
  • Red onion
  • Corn meal
  • Gluten Free Bisquick
  • Buttermilk
  • Egg
  • Baking powder
  • Spices: cumin. onion powder, garlic powder, salt, chili powder, pepper
  • Oil for frying
These easy Corn Fritters are loaded with sweet corn, salty bacon, green chilies and spices!

How do you make easy Corn Fritters?

  1. Combine all ingredients in a large mixing bowl and stir completely combining all ingredients well.
  2. Heat a large skillet to medium heat, pour enough oil to cover the bottom of the skillet.
  3. Using an ice cream scoop or small measuring cup scoop the fritter mixture into the skillet.
  4. Lightly press the mixture so it spreads out uniformly.
  5. Cook 3-4 minutes until crisp and golden brown, then flip.
  6. Place fitters on a wire rack to drain any remaining grease.

What should I serve with Corn Fritters?

These corn fritters make a great easy meal or appetizer on their own. Personally I like to dip mine in ranch dressing or serve with salsa and sour cream. However, if you want to serve these up as a side there are many things that pair perfectly with them!

  • Slow Cooker Chicken Tacos: these tacos are loaded with salsa verde and lime flavor. They pair so well with the corn fritters. Don’t forget a few extra lime slices for garnish, you will love the extra kick it adds!
  • Buffalo Roast Chicken: This might be a slightly unexpected pairing but the tangy roast chicken has such amazing flavor! I love to the pulled chicken on top of my corn fritter stacks and drizzle with a little queso!
  • Chili or Soups: you can imagine what a great pairing these easy corn fritters are with your favorite chili and soups! Personally I love this no bean chili and this White Bean Chicken Chili!

Ingredients

  • 15 ounces canned white or sweet corn corn, drained and rinsed or 2 cups fresh corn
  • 4 ounces canned green chiles
  • ¼ cup chopped red onion
  • 1 cup corn meal
  • ¼ cup Gluten Free Bisquick
  • 1 cup buttermilk
  • 1 egg
  • 1 teaspoon baking powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon pepper
  • oil for frying
