Yes, you read that right, Keto Enchiladas! These incredibly simple Keto Enchiladas have just a few basic ingredients and can be made in just a matter of minutes! Ingredients Needed for Keto Enchiladas
- Ground Beef: you could also use ground turkey or chicken if you prefer.
- Taco Seasoning: any low carb taco seasoning will work, this homemade version works perfectly.
- Cheddar Cheese Slices: If you want to mix things up you can use Pepper-Jack for a spicy version
- Enchilada Sauce: a low carb canned version works well, I use this homemade enchilada sauce recipe.
How do you make Keto Enchiladas?
These Keto Enchiladas can be made in just three simple steps. The method for making these low carb enchilada shells is the same as the keto fajitas. Simply place cheese slices on a silicone baking sheet and bake for 5-7 minutes until they have browned around the edges. If you wish to make crispier tortillas simply cook them until they are your desired consistency.
- Preheat an oven to 350 degrees F. Bake cheddar cheese slices for 5-7 minutes until they have browned around the edges. Allow the cheese to cool slightly so you can easily handle it.
- Add the prepared, seasoned taco meat to each cheese shell and roll tightly, seam side down.
- Top with warm enchilada sauce.
Tips and Tricks for Keto Enchiladas
- I used cheddar cheese slices, however any variety of cheese slice will do. For a spicy version you can use Pepper-Jack cheese, or for the least greasy version use mozzarella cheese slices.
- Use a silicone baking sheet to ensure the cheese does not stick to the pan.
- You can use beef, chicken, turkey, shrimp or chorizo to create your own spin on these enchiladas. Simply season the meat with a low carb taco seasoning.
