Is your garden overflowing with anything right now? In June and through most of July, I am swimming in squash and zucchini. However, by August the peppers have taken over! We are enjoying fresh bell peppers, sweet peppers and jalapeños with most meals!
We have made lots of stuffed peppers and corn fritters with the peppers on hand, but these Easy Sheet Pan Fajitas have to be one of the simplest ways to use them! I love sheet pan recipes because everything is baked together. This makes clean up a breeze!
Ingredients for Sheet Pan Chicken Fajitas
- Chicken: boneless skinless chicken breast cut into small chunks or strips
- Bell Pepper: green, red, yellow or orange bell pepper work great for this recipe. If you prefer you can switch things up and use a variety of sweet peppers for a slightly different flavor
- Onion: white, yellow or red onion
- Jalapeños: seeded fresh jalapeños work best, but if you don’t have access to fresh, you can use pickled jalapeños.
- Lime: both lime zest and juice are needed for this recipe.
- Olive Oil
- Garlic: minced fresh garlic
- Spices: chili powder, cumin, garlic powder, paprika, salt and pepper
How do I make Sheet Pan Fajitas?
- Preheat the oven to 400 degrees F
- Line a large baking sheet with foil and lightly spray with cooking oil
- Place the chopped onion, bell pepper, jalapeño and chicken in rows on the pan.
- In a small bowl combine the olive oil, lime juice, lime zest and garlic. Drizzle over the entire sheet pan.
- In another small bowl combine the chili powder, cumin, garlic powder, paprika, salt and pepper.
- Sprinkle over the chicken and vegetables and, toss to coat so the seasoning is evenly distributed.
- Bake 15 minutes, remove from oven and turn, bake 10-15 minutes more, until the chicken is cooked through.
Can I use another protein for sheet pan fajitas?
Yes, you can sub thinly sliced pork, shrimp or even steak with this recipe. The approximate cooking time for each protein is listed below:
- Pork Fajitas Cooking Time: Preheat the oven to 400 degrees F. Bake 15 minutes, turn and bake 10-15 minutes more.
- Shrimp Fajitas Cooking Time: Preheat the oven to 400 degrees F. Bake 10 minutes, turn and bake 7-10 minutes more.
- Steak Fajitas Cooking Time: Preheat the oven to 400 degrees F. Bake the vegetables ONLY for 10 minutes, flip and bake 10 minutes more. Add sliced flank steak to the sheet pan and broil for 3-4 minutes until it reaches your desired doneness.
How many carbs are in chicken fajitas?
For this recipe the chicken fajitas come to 4.4 net carbs per serving. There is always a bit of debate about incorporating peppers or onions on a keto diet. I think this is a great example of how to incorporate those vegetables that have carbs within moderation. You can still enjoy fajitas with peppers and onions without blowing a low carb or keto diet!
How should I serve sheet pan fajitas?
These fajitas are excellent eaten “naked” without tortillas. I love to make a fajita bowl and top it with sour cream, avocado, a little cheese and of course a bit of extra lime juice! However, there are many ways to enjoy this recipe!
- Low Carb Tortillas: make a taco or quesadilla using low carb, high fiber wraps.
- Fajita Salad Bowls: place your favorite greens in the bottom of the bowl, top with the fajita mixture, avocado, sour cream, a touch of salsa or hot sauce and low carb ranch dressing!
- Keto Chicken Fajita Taquitos: use this method to melt cheese to create low carb tortillas.
- Fajita “Rice” Bowls: sauté cauliflower rice and season with salt, pepper and lime juice. Top with the sheet pan fajitas and your favorite Mexican fixings.
