Top with your favorite toppings and you’ve got the perfect keto meal in just minutes!
The zucchini is sliced thin to be your “chips” and it fits the bill perfectly, while drastically reducing the carbs- this dish is only 2.1 net carbs per serving! These zucchini chips are a great way to sneak some veggies onto your kids’ plates! This recipe is also a great way to use leftover taco meat or ground beef and it can be easily customized to fit everyone’s tastes. This healthy twist on a classic appetizer is sure to please even your pickiest eaters!
How do you make Keto Nachos?
These veggie nachos come together in a flash! For the Air Fryer, place your sliced zucchini down in your basket (I recommend using a liner). Top your zucchini chips with taco meat (or whatever meat you choose) and add your cheese. Heat your air fryer to 375 degrees F and cook for 6 minutes.
Check your nachos, and if the cheese is not melted or the zucchini isn’t tender, cook in 2 minute increments until it is. If preparing in the oven, layer as instructed and bake for 10 minutes at 375 degrees F. After 10 minutes, check to see if your zucchini is tender. If not, cook in 2 minute increments until it is done enough for you.
What kind of meat should I use?
Any you prefer! I used ground beef seasoned with this keto taco seasoning. You could easily substitute the beef with ground turkey or chicken. You could also use this Keto Crockpot Chicken if you prefer shredded chicken, or try this Jalapeno Lime Marinade for grilled chicken! If you aren’t keto, or if you want a vegetarian protein source, I love these Seasoned Black Beans. This recipe is a fantastic way to make use of any leftover meat!
Do I have to use an air fryer?
Nope! These healthy nachos are easily made in the oven. Just layer and cook for 10 minutes at 375 degrees F. Check to see if your zucchini is tender and your cheese has melted- if not, just cook for 2 more minutes.
