The beauty of this soup is its versatility, which basically means you can use whatever cut of chicken takes your fancy! 

Chicken breasts are tasty and easily accessible, but equally, chicken thighs are inexpensive and generally have a little more flavor.

How do I make Sicilian Chicken Soup?

  1. Heat a large dutch oven or stock pot to medium heat.
  2. Add the olive oil, garlic, onion, bell pepper, celery and carrots. Sautรฉ the vegetables for 4-5 minutes, stirring occasionally.
  3. Add the undrained tomatoes, chicken broth, spices and chicken.
  4. Bring to a boil and then reduce heat to simmer and cover. Allow the soup to cook 30 minutes covered.
  5. Just before serving remove the chicken and shred, add back to the soup and serve with fresh parmesan, salt and pepper.

How many days in advance can I make Chicken Soup?

Soup can generally be kept for a few days in the refrigerator. In fact, as Iโ€™ve already touched upon, it could definitely be argued that this soup tastes even better after a day or two! 

Letting your soup sit before tucking in allows all of those wonderful flavors to meld together, complimenting each other to perfection.

To store your soup, simply let it cool to room temperature for around 30 minutes. Then, transfer it into small containers and refrigerate or freeze, depending on how long youโ€™d like to keep it for. If youโ€™re freezing your soup, donโ€™t fill the containers completely, as liquids do expand when frozen.
