Carrot Smoothie Ingredients

  • Frozen pineapple and Fresh carrot –
  • Light coconut milk – This canned ingredient is low in fat and calories. Feel free to replace with full-fat coconut milk if you would like. Dairy milk, almond milk, and other substitutes can be used if you prefer, but you will lose out on some of the tropical flavor from the coconut.
  • Sweetener – Sugar, honey, maple syrup, date sugar, coconut sugar, liquid monk fruit, Swerve, etc. will all work. Use your favorite.
  • Vanilla extract – This helps create a full-bodied flavor and complements the taste of the carrot and pineapple.

How to make the best carrot smoothie

This breakfast recipe could not be any easier! Simply pour all ingredients into a blender, put on the lid, and give it a good whirl. It may take a few minutes to get it super smooth, but just keep blending until there are no chunks left.

What to serve with carrot smoothies?

Smoothies are best served fresh, nice and cold right out of the blender. Because this smoothie is very light, I like pairing it with a hearty meal like Parmesan Eggs with Swiss Chard or a Potato Hash. It’s also easy to take in a rush with breakfast ham biscuits (or these with bacon)

Storage

I do not recommend making this ahead of time as it is best fresh. If you do not finish yours, you can pour leftovers into an ice cube tray, then blend these cubes with your favorite juice later for a similar drink.

I kept things very simple in this recipe because sometimes you just want a straight-forward, delicious smoothie. However, smoothies can easily be adjusted to boost nutrition and flavor! We’ve done a deep-dive on making the perfect smoothie based on your preferences and needs. Here are some things you could add if you like:

  • Greens – If you prefer super smooth smoothies, I recommend blending these with just the liquid before adding fruit or other ingredients. Spinach has a nice, mild flavor and is my go-to smoothie green.
  • Flax seed, chia seeds – We get a big boost of fiber, healthy fats, and antioxidants. You can also get a wonderfully thick texture by allowing these to sit in some coconut milk for 10 minutes before blending!
  • Greek yogurt, cottage cheese, avocados, or nut/seed butters – These add a velvety smooth texture and rich flavor. They also tend to add tons of protein!
  • Protein powder, collagen powder, superfood blends – You can target specific dietary goals with specialty powders. Smoothies are a fantastic way of incorporating these into your day!

Ingredients
  

  • 1 cup frozen pineapple
  • 1 large fresh carrot
  • ¾ cup light coconut milk
