- Yellow onion, Carrot, Yellow bell pepper, and Russet potatoes – These veggies bulk up the soup while adding fantastic flavor and tons of vitamins and minerals. If you want additional veggies, you could add chopped celery as well.
- Beef broth and Worcestershire sauce – The base of the soup. The better the quality broth, the better the flavor of your soup. Feel free to swap for chicken broth or vegetable broth if you prefer, but beef will give it a stronger burger flavor.
- Hamburger seasoning, Garlic powder, Onion powder, and Paprika – You can swap the hamburger seasoning for your favorite all-purpose seasoning if you like. I found that our broth had enough salt for our taste, but feel free to season with salt and pepper at the end to your preference.
- Cream cheese and Sharp Cheddar cheese – Make sure to allow the cream cheese to soften at room temperature for 30-60 minutes before adding to the soup so it melts super smoothly. Freshly shredded cheese melts smoother than the store-bought bags of shredded cheese, too.
- Optional garnishes: crumbled bacon, fresh herbs (parsley, basil, oregano, or thyme), extra cheese, chopped tomatoes, sautéed mushrooms, etc.
How to make cheeseburger soup
This easy soup only requires just one large pot with a lid, a stovetop or hot plate, and about 40 minutes! Here is a step-by-step guide for making it super creamy and delicious.
Brown beef

In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Once nice and brown, drain any excess grease.
Sauté veggies


Add the diced onion, carrot, and bell pepper to the pot with the beef. Cook for 3-4 minutes until softened. Stir in the Worcestershire sauce, hamburger seasoning, garlic powder, onion powder, and paprika, mixing well to make sure each bite is coated.
Boil potatoes

Add the diced potatoes and beef broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes or until the potatoes are tender.
Make it creamy and cheesy

- Why is mine not super creamy?
- If your cream cheese was cold when you added it, you will struggle to get it to melt into a smooth texture. If you use store-bought pre-shredded cheese, the starch it is coated in can prevent it from melting smoothly. You could ladle some of the liquid from the soup into a blender, then add the cream cheese and pulse until creamy to try to prevent this if you would like. You could use Velveeta instead of cheddar and sour cream or heavy cream instead of cream cheese if you would like, but it will result in a more processed flavor and a thinner soup.
