How to Make a Jalapeno Cheddar Frittata
For this simple breakfast recipe, all you need is an oven, stove top, 9-inch skillet (can also use 9-inch pie pan for baking), and mixing bowl. Here is a step-by-step guide for making this recipe.
Cook the sausage and peppers
Preheat the oven to 400 degrees F. Then, over medium heat, brown the sausage, breaking up as you go. When the sausage is nearly cooked through add the chopped peppers and saute 3-4 minutes until tender. Remove the skillet from heat and set aside.
Make the egg mixture
In a bowl, whisk the eggs and heavy cream. Add salt and pepper to taste. Fold in one cup of the shredded cheddar cheese. Carefully pour the egg mixture into the skillet.
Bake
Bake for 15 minutes and remove from the oven and add the remaining 1/2 cup shredded cheese. Bake an additional 6-10 minutes until the eggs have set.

Storage and Reheating Instructions
Storage: Place the frittata in a glass or plastic container with an airtight lid and put in the fridge for up to 3 days. It can also be frozen. It is best to wrap individual pieces in plastic wrap and place in a freezer bag. You can freeze for up to two months.
Reheating: To reheat from frozen, first place in the fridge overnight to thaw. If using a microwave, place on a microwave safe plate and warm in 30 second increments until it is to your desired temperature. We recommend reheating in the oven or air fryer. For the oven, you can use any oven safe dish and warm at 350 for 7-10 minutes. It is best to cover the frittata with aluminum foil so it doesn’t begin to dry out. For the air fryer, warm at 300 degrees for 5-6 minutes. Again, we recommend covering the frittata with aluminum foil.
