Do I have to cook real bacon?
I highly encourage you to take the extra step to cook fresh bacon verses using bagged, pre-cooked bacon bits. The flavor is so much better with fresh bacon! It is absolutely worth the small step.
How to make Bacon Bits
Slice your raw bacon and cook on the stove top until almost done- your bacon will crisp up as it cools. I recommend taking it out of the pan with a slotted spoon, so you can leave a lot of the grease in the pan. Move to a paper towel lined plate and allow to cool.

To store this cauliflower salad, keep in a plastic or glass container with an airtight lid and keep in the fridge. This salad will keep for up to 3 days. However, I prefer to enjoy this salad within 24 hours of preparing it. The texture is still very crunchy and the taste is super fresh.
Tips for the Best Broccoli Cauliflower Salad
- Bite Size: make sure you break the broccoli and cauliflower into small bite size pieces so you can enjoy all the different elements of the salad in each bite. Alternatively, if you prefer a chopped salad, you can chop the ingredients for a more uniform texture.
- Real Bacon: skip the bagged precooked bacon for this salad. While the precooked bacon can work in a pinch the flavor of freshly cooked bacon is unbeatable. It is absolutely worth the extra step.
- Cheese Cubes: you can use shredded cheese is you prefer, but the cheese cubes hold their texture much better in this salad, especially if you are making ahead of time.
- Sweetener: this salad needs a smidge of sweetener in the dressing to balance the apple cider vinegar. You can use monkfruit if you are low carb, or traditional granular sweetener if you are not counting carbs.

- 4 cups cauliflower florets
- 1 cup sharp cheddar cheese cubes
