This is the best brussel sprout recipe! These caramelized brussels sprouts are covered in a maple Dijon sauce and roasted until perfectly tender with crunchy pecans.

We are absolutely loving this crunchy, salty-sweet caramelized brussels sprouts! After perfecting the amazing texture in this roasted brussels sprouts recipe, I’ve been experimenting with different flavor combinations for years. This one perfectly balances the earthy bitterness of the brussels sprouts with savory, salty, and sweet flavors from a handful of simple ingredients you probably already have.
It’s like the side dish upgrade that costs extra at a restaurant, but it really is so easy! There’s no reason you can’t make the upgraded version at home with just as much effort as the basic recipe takes. Because this one is sweeter and crunchier, it’s also a bit more palatable for those who don’t usually love brussels sprouts. This one is easy enough for a weekday but special enough to work for holidays!
Why you will love this brussels sprouts recipe:
- Easy – You only need 8 simple ingredients and a baking sheet. This recipe is simple enough for beginners, busy families, and those with low energy.
- Wholesome – The sweet and savory sauce brings out incredible flavor, letting the veggie shine in this side dish. It’s easy to use an alternative sweetener to make this a low-carb, keto recipe, too!
- Super Versatile – These brussels sprouts are amazing atop a grilled ribeye, tossed with fresh pasta, beside a pork tenderloin, in a rice bowl, and with about a million other dishes. You won’t have to worry about these going to waste because you’ll be able to enjoy them in multiple ways.

Ingredients for Caramelized Brussel Sprouts
Here’s a quick overview of what you will need. Scroll to the printable recipe card for exact measurements.
- Brussels Sprouts and Garlic – Sprouts should be fresh, trimmed, and halved. Choose firm brussels sprouts with tightly-packed leaves for the best flavor and texture. Garlic should be minced (don’t worry, this won’t burn because it gets added halfway through!)
- Olive Oil – Any neutral cooking oil will work, so feel free to sub your favorite.
- Soy Sauce, Maple Syrup, Dijon Mustard, and Salt – These flavor-makers give this dish the salty-sweet flavor we love so much! Use reduced sodium soy sauce and keto syrup instead of maple if that’s better for your needs.
- Pecan Halves – This adds an hearty crunch and earthy flavor to the side. I have not tried other nuts, but I imagine walnuts, almonds, cashews, or peanuts would be delicious as well.
How to Cook Brussel Sprouts in Oven

- Prep. While you slice your brussels sprouts in half, allow your oven to preheat to 400 degrees F.
- Season. Toss your trimmed sprouts in the cooking oil, sprinkle with salt, and lay cut-side down on the baking sheet.
- Roast. Bake the brussels sprouts for 15 minutes, then remove the pan from the oven, flip the sprouts, and return to the oven to continue cooking for another 10 minutes.
- Add sauce. While the sprouts are roasting, mix together your remaining ingredients in a jar or bowl. Once the brussels sprouts are tender on the inside and crispy on the outside, remove the pan from the oven and pour the sauce over them. Stir the brussels sprouts around the pan to coat.
- Roast again. Return the pan to the oven and let the saucy brussel sprouts to cook for another 3-4 minutes. This gets the sauce perfectly caramelized on the sprouts, softens the garlic flavor, and gives you the absolute perfect texture.
What to Serve with Oven Roasted Brussel Sprouts
Because these brussels sprouts have such a well-rounded, full-bodied flavor, you can pair them with all kinds of dinners like this Instant Pot Chicken and Rice or Butternut Squash Mac and Cheese. For an easy meal, just serve with a nice creamy base (like cheesy grits or cauliflower risotto) and your favorite juicy protein like steak or pork chops. It even makes a great holiday side dish like cheesy scalloped potatoes with ham, always perfect for Easter, Thanksgiving, and other nice holiday dinners.

Storage and Reheating
Allow your brussels sprouts to cool completely, then store in an airtight container in the fridge for 3-4 days. I recommend reheating in the oven at 350 degrees F until warmed throughout. If yours got very browned during the initial cook, you might want to cover the sprouts when reheating so they don’t char more than you like.
