This is a great basic recipe for using up leftovers in the fridge! Different meats and cheeses can change the dish completely so you’ll never get bored. This works great with homemade hash browns, but frozen hash brown patties work great and let you get by with minimal prep!
Ingredients for Hash Brown Breakfast Bowls
Here’s a quick overview of what you’ll need. You can find exact measurements in the printable recipe card near the bottom of the page.
- Cooked Hash Browns – I used frozen hash brown patties, but you can make homemade hash browns, too! Use your favorite type of hash browns; patties, shredded, or diced all work well!
- Cooked Sausage – I used crumbled sausage, but you could easily use patties if you prefer. Here’s a great homemade breakfast sausage recipe that’s low-carb and keto-friendly if you’re watching your sugar. You could replace this with a different meat or protein if you’d like.
- Cheese – I used shredded cheddar cheese because I love it with eggs and sausage. You could use sliced cheese, swap out the cheddar for Swiss or Pepper Jack, or use a mixture of cheeses. Feel free to skip it if you’re dairy-free.
- Egg – I used 1 large egg and fried it. You can increase the eggs for more protein, use only egg whites for reduced cholesterol, or even use an egg substitute if you prefer. Scrambled eggs work wonderfully for meal prepping or just a different texture.
- Salt, Pepper, Red pepper flakes (optional) – These just bring out the great flavors in our other ingredients. If you don’t like spice, you can leave out the red pepper flakes entirely.
- Spray oil or butter – For the egg
What kind of hash browns should I use?
I used frozen hash brown patties that had been cooked in the air fryer (15-17 minutes at 380 degrees or 12-14 minutes at 400 degrees). These are just easy and convenient. However, you can also use homemade hash brown patties! If you prefer cubed potato hash or looser shredded hash browns, you can use those instead.
How to Make a Breakfast Bowl with Hashbrowns
This is an easy breakfast to meal prep and assemble quickly in the morning! Here’s a step-by-step guide to this balanced breakfast.
Cook egg
In a small pan, heat to medium and add a small amount of oil or butter. Once hot, crack your egg and cook to your preference. I like it fried but runny. You could scramble or poach your eggs if you’d like! Scrambled eggs refrigerate well, so it’s a great option if you’re meal prepping several days’ worth of breakfasts at once.
NOTE: If you want some super flavorful eggs, try making Parmesan Eggs or Pesto Eggs!
Warm hash browns & sausage
While your egg is cooking, warm up your cooked hash browns and sausage. Tear your hash browns into bite-sized pieces and place them in a bowl. Top with crumbled sausage and shredded cheese. If your sausage isn’t hot enough to melt the cheese, feel free to pop it in the microwave for about 20 seconds to melt.
Assemble bowls
Once the egg is cooked the way you like it, slide it on top of the cheese and sprinkle with chopped green onions, fresh herbs, and additional cheese for garnish (optional). Serve immediately.
Serve
I like making and serving these as individual bowls so that each person can customize based on their tastes/hunger level. However, you can double/triple/multiply this recipe and make it in a casserole dish! This works best with scrambled eggs, but it’s great for making an easy breakfast after holidays or sleepovers.
Store
Leftovers should be stored in the fridge in an airtight container up to 3 days. However, the hash browns will lose all the crispiness if they are stored with the remaining ingredients. Additionally, fried eggs don’t generally reheat well. If you’re meal prepping, I recommend using scrambled eggs–Those can be kept in a bowl with sausage and cheese, separately from the hash browns.
Reheat
If you love crispy hash browns, first reheat hash browns in the air fryer (380 for 3-5 minutes) until crisp. The eggs, sausage, and cheese can be microwaved at 50% power in 30-second increments until warmed throughout.

- 2 cooked hash brown patties about 4-5 ounces
- 1/3 cup cooked crumbled sausage (about 2 ounces)
- 1/4 cup shredded cheddar cheese
- 1 egg
- Spray oil or butter
