How to make gluten free cookies:
It all starts with ingredients. Most recipes call for almond flour, and some use coconut flour. These have very different absorption rates, so make sure to use them as directed in the recipes you choose. These Dark Chocolate Peppermint Cookies even use a gluten free cake mix, so you could easily keep one on hand for baking emergencies!
If you don’t have any gluten-free flours, have no fear! You can still make these Chocolate Chip Flourless Peanut Butter Cookies or these No Bake Cookies! So delicious, easy to make, and perfect for that gluten-free friend without buying ingredients you might not use much later.
What kinds of gluten free cookie recipes can I make?
You can have virtually any cookie made to be gluten free! This list has gluten free no bake cookies (even oat free for those who can’t have oats), gluten free chocolate chip cookies, gluten free cake mix cookies, gluten free sugar cookies, even gluten free whoopie pies!
Tons of these cookies are even keto-friendly and sugar free! Those recipes use monk fruit or Swerve, which are sugar substitutes that don’t raise blood sugar or insulin levels. If you are not focused on carbs or staying sugar free, you can simply use your normal sugar, brown sugar, or powdered sugar.
Coconut Flour vs Almond Flour
Several of the recipes in this post use Coconut Flour or Almond Flour. These types of flour are gluten free, as well as keto and low carb. It’s important to note that these flours cannot be used in a 1:1 ratio for each other- coconut flour is very absorbent, so you generally will need less of it in a recipe. If you are substituting coconut flour for gluten free flour, you will need 1/4 cup coconut flour for every 1 cup of traditional flour.
