Ingredients

Here is what you need for this cozy soup recipe. Scroll to the printable recipe card at the bottom of the page for exact measurements and nutrition facts.

  • Ground beef – Use a lean ground beef to avoid having too much grease. Feel free to use ground turkey if you prefer to lower the fat content further.
  • Yellow onion, Carrot, Yellow bell pepper, and Russet potatoes – These veggies bulk up the soup while adding fantastic flavor and tons of vitamins and minerals. If you want additional veggies, you could add chopped celery as well.
  • Beef broth and Worcestershire sauce – The base of the soup. The better the quality broth, the better the flavor of your soup. Feel free to swap for chicken broth or vegetable broth if you prefer, but beef will give it a stronger burger flavor.
  • Hamburger seasoning, Garlic powder, Onion powder, and Paprika – You can swap the hamburger seasoning for your favorite all-purpose seasoning if you like. I found that our broth had enough salt for our taste, but feel free to season with salt and pepper at the end to your preference.
  • Cream cheese and Sharp Cheddar cheese – Make sure to allow the cream cheese to soften at room temperature for 30-60 minutes before adding to the soup so it melts super smoothly. Freshly shredded cheese melts smoother than the store-bought bags of shredded cheese, too.
  • Optional garnishes: crumbled bacon, fresh herbs (parsley, basil, oregano, or thyme), extra cheese, chopped tomatoes, sautรฉed mushrooms, etc.

How to make cheeseburger soup

This easy soup only requires just one large pot with a lid, a stovetop or hot plate, and about 40 minutes! Here is a step-by-step guide for making it super creamy and delicious.

Brown beef

ground beef crumbled and browned in the bottom of a cast iron dutch oven

In a large pot or Dutch oven over medium heat, cook the ground beef until browned, breaking it apart as it cooks. Once nice and brown, drain any excess grease.

Sautรฉ veggies

Add the diced onion, carrot, and bell pepper to the pot with the beef. Cook for 3-4 minutes until softened. Stir in the Worcestershire sauce, hamburger seasoning, garlic powder, onion powder, and paprika, mixing well to make sure each bite is coated.

Boil potatoes

Add the diced potatoes and beef broth. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for 15-20 minutes or until the potatoes are tender.

Make it creamy and cheesy

Stir in the cream cheese and cheddar cheese until smooth. Taste and adjust seasonings to your preferences. Serve bowls of this soup hot, garnished with shredded cheese, crispy bacon, or fresh herbs if desired.

What to Serve with Burger Soup

I highly recommend having some Homemade Pickles on the side of a big bowl of this cheesy hamburger soup for those who like the tangy touch of vinegar. This is a fantastic meal all on its own, but it’s also great with a Wedge Salad for a steakhouse vibe or this Arugula Salad for a peppery, mustardy flavor.

For those that like something to dip in their soup, try this Cheddar Cornbread (or Jalapeno Cornbread for some spice). To play up the cheeseburger theme, dunk these crunchy Baked Onion Rings in it instead!

Storage and Reheating

Allow the soup to cool, then store in an airtight container in the refrigerator up to 4-5 days. To reheat an individual serving, place in a bowl and microwave on 50% power in 1-minute increments, stirring between each blast. To reheat the whole recipe or several servings, pour into a pot and heat on medium low, stirring occasionally for even heating.

Cheeseburger Soup FAQs

  • Can I make this with another meat?
    • Making this with ground chicken, pork, or turkey would still be delicious, but it will have less of a cheeseburger flavor.
  • How can I make this spicy?
    • You could add a pinch or two of red pepper flakes to your ground beef during the browning step to increase the heat in this recipe. Alternatively, you could add cayenne or chili powder to the seasonings or drizzle with your favorite hot sauce.
  • Why is mine not super creamy?
    • If your cream cheese was cold when you added it, you will struggle to get it to melt into a smooth texture. If you use store-bought pre-shredded cheese, the starch it is coated in can prevent it from melting smoothly. You could ladle some of the liquid from the soup into a blender, then add the cream cheese and pulse until creamy to try to prevent this if you would like. You could use Velveeta instead of cheddar and sour cream or heavy cream instead of cream cheese if you would like, but it will result in a more processed flavor and a thinner soup.
