Big, meaty garden tomatoes are sliced and juicy cherry tomatoes are quartered for the perfect blend of flavors and textures to soak up the amazing vinaigrette. Ingredients
Here’s a quick overview of what you’ll need for this easy summer salad. Find exact measurements in the printable recipe card at the bottom of the page.
- Tomatoes – Large & cherry varieties. You want a mix of heirloom and regular varieties for the best flavors and textures.
- Burrata – There’s really no substitute for the amazing, creamy texture you’ll get from burrata cheese. If you can’t get it, though, some fresh mozzarella will be tasty, too.
- Basil – Shredded. This is the easiest way to ensure you’ll get a burst of fresh, herby flavor in every bite.
- Vinaigrette ingredients – Olive oil, Champagne vinegar, liquid sweetener, Dijon mustard, minced garlic, salt, and pepper. Feel free to swap the olive oil with your preferred mild oil for a dressing. If you can’t find champagne vinegar, you could replace it with apple cider vinegar. You could use honey or maple syrup for the liquid sweetener (or sugar-free maple syrup to make this keto & low-carb).
How to make a fresh burrata salad
This easy salad recipe is simple and delicious while looking gorgeous at a party! Here’s a step-by-step guide to making this healthy side dish or appetizer.
Make the vinaigrette
Start by making your champagne vinaigrette. Simply pour your vinegar, olive oil, mustard, minced garlic, salt, and pepper into a bowl and whisk. You could also put it all in a jar and shake–This is my preferred method if I’m prepping for the week because I can just put the jar in the fridge until I need it.
Slice tomatoes
Cut your cherry tomatoes into quarters, then slice your large tomatoes horizontally. Discard the ends and any hard core pieces if your tomatoes have any in the center of your slices. These can usually last up to 3 days in the fridge, so feel free to prep this ahead of time. If sliced ahead of time, pour out any excess water that comes from the tomatoes while they’re sitting in the fridge.
Assemble salad
Arrange your sliced tomatoes however you like on a rimmed platter or bowl, then drizzle with half of the vinaigrette. Place the burrata in the center, then drizzle the rest of the dressing over the cheese and tomatoes. Sprinkle the top with your chopped basil, then serve immediately.

Storage instructions
I don’t recommend making this ahead of time as the tomatoes get quite watery and the basil wilts as it sets in the dressing. You can prep it ahead of time by slicing the tomatoes and mixing the dressing, but keep the elements separated until you’re ready to serve.
Tips & Tricks for the Best Tomato Salad
- If you sliced up your tomatoes ahead of time, you may want to drain them before making this salad. Tomatoes get watery as they sit, and that’s why we don’t recommend mixing up this salad until you’re ready to eat.
- Consider adding more greens! If your basil plant is flourishing, feel free to add more basil. This would be fantastic on a bed of spinach, too!
- Feeling extra hungry? You could add diced grilled chicken or air fryer steak tips to stretch the meal further and add more protein.
- Missing something? No problem. If you can’t find fresh burrata cheese, consider making this easy caprese salad with mozzarella pearls instead! If you don’t have fresh basil, you could use a spoonful of homemade pesto.

Burrata Salad
Ingredients
- 3 large tomatoes mix of heirloom and regular
- 2 cups cherry tomatoes quartered
- 4 ounces burrata
- 1/3 cup shredded basil
Vinaigrette
- 1/4 cup extra virgin olive oil
- 2 tablespoons champagne vinegar*
- 2 tablespoons sweetener honey or sugar free maple syrup if low carb
- 1 teaspoon Dijon mustard
- 1 teaspon minced garlic
- salt and pepper to taste
Instructions
- Combine the vinaigrette ingredients in a bowl and whisk until smooth.
- Slice the large tomatoes horizontally, discarding the ends.
- Arrange the large tomato slices and quartered tomatoes on a rimmed platter or bowl. Drizzle with half of the vinaigrette.
- Place the burrata in the center and drizzle the remaining dressing over the burrata and tomatoes.
- Top with chopped basil and salt and pepper to taste.
- Serve immediately.
Notes
- Moisture will be an issue if this salad sits out, it is best to serve fresh.
- You can use apple cider vinegar if you cannot find champagne vinegar.
